San Marzano (TA), Salento, Puglia, about 100 m above sea level. The area is characterised by high temperatures and medium-low rainfall. The soil is loamy, shallow with a high concentration of rocks
Thermo-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days
Purplish red with violet-black reflections, intense and persistent aroma, fruity with a scent of blackcurrant and wild fruits, subtle notes of thyme. Full-bodied, velvety and balanced on the palate with a long and savoury finish
